What changes when you roll more than one die

With a single die every face is equally likely: each of the six has a one in six chance. Roll two and that stops being true of the total, because most totals can be reached in more than one way.

There is only one combination that makes 2, and only one that makes 12, but six that make 7. Over many rolls a 7 therefore turns up about six times as often as a 2. That lopsided shape is why so many board games are built around two six-sided dice: the middle totals are common enough to plan around, and the extremes stay rare enough to feel like an event.
